I love Chinese New Year, I love the promise of the year ahead, love the little money envelopes that always make people smile and love love love the celebration food. This year it happened to fall on the same day as pancake day and so crispy duck and pancakes seemed the perfect dish to celebrate both days. The skin was very crispy, the meat soft and gorgeous, the sauce full of umami and the fresh cucumber cutting through all of it and wrapped beautifully in a little pancake. Crispy duck is such a gloriously wonderful thing to eat and something that is very difficult to stop once you start.
