I had to go into the office today to London and then sprint back home to get back for yet more meetings which I sat on until late. As I was sitting upstairs in my office I could smell these wonderful aromas floating up the stairs. We planned to make the chicken and lime leaf curry with noodles from the Ottolenghi Comfort book and Rhona had started while I sat on my meeting so I could just come down and not worry. It was so so nice.
What can I say but wow wow wow wow wow, this dish was absolutely deeeelicious! This really did taste like the laksa I make, only with hours less spent in the kitchen. We did substitute the raw chicken thigh for leftover cooked chicken but it did not detract at all and worked perfectly.
This is definitely on the repeat list, I loved it, a gorgeous steaming bowl of noodles vegetables and chicken curry broth, yum!
