Looking through Mezcla the other day I found a recipe that had been calling out to me since getting this book, a chicken and nduja bake which looks so great.  I could not get this out of my head and since Mezcla is off the shelf it made sense to cook it.  This was such an easy meal to make, you mix a paste, coat the chicken, put the chicken on a bed of pineapple and onions and bake.  Simple but my goodness so very very good.  It was spicy but not overly so, deep and rich and tangy and fruity and on rice was just lovely.  This recipe is a keeper.
