I couldn’t resist some pork chops that the butchers had, crispy crackling on a pork chop is a thing of beauty.  I was looking around for inspiration and came across a recipe classed as ‘the worlds best pork chop recipe’.  Well that is some claim!  Of course as soon as I saw it I had to try it.  It was nice but was it the best pork chop I have eaten?  No, nowhere near which means it can’t be the worlds best.  I think with some tweaking it could be really nice, it maybe just needs some ginger, a little bit of spice and the crackling scoring so it definitely crackles up.  We served it with Chinese inspired noodles with stir fried cabbage, I love five spice and these were delicious.
