Rhona makes this amazing breaded chicken with coleslaw. It’s so so good but a fair amount of work. I wanted the chicken but didn’t feel like spending a long time in the kitchen so thought I would take inspiration from the breaded mushrooms that I made the other week that were baked and make oven baked breaded chicken.  I had a bowl with cornflour, a bowl with egg whites and a bowl with panko breadcrumbs.  I first coated the chicken in cornflour then into the egg whites then into the panko and I baked for 30 mins until they were golden. 

The mistake I made was to cook in a ceramic dish - this needs to be cooked on a metal tray.  Oven cooking is much less hassle and faff and took 5 mins of prep time.
