I am trying really hard this year to ensure nothing gets wasted. It is sometimes easy to plan meals, be too tired to make them and then forget about the ingredients you bought. Planning our meals last night, among some of the bits of leftovers I had lying around was a bag of mixed leaves, onions, raita and buns and since I did not want to have them go off and waste them I needed to find what to do. We got going through the thousands of recipes we have and then came upon the idea of a bhaji burger. A bun with mango chutney, spinach, a veggie burger, an onion bhaji topped with raita. This was absolutely perfect Friday food, immensely satisfying and so delicious. The crispy flavourful bhaji made a very interesting, very delicious change to either crispy or caramelised onions. Highly recommended.
