Last weekends Nando’s inspired chicken was enjoyed so much by Matt that he requested it again this week. Rhona found a nice looking chicken dish which was a buttermilk marinated fillet, fried and served in a burger bun with guacamole chipotle mayo.  I put peri peri seasoning in the buttermilk and in the seasoned flour. We added bacon slices and iceberg and it ended up being the chicken burger with everything, it was creamy from the guacamole, smokey/spicy from the chipotle, crunchy from the chicken and the iceberg and salty from the bacon.  It was so good.
