I saw a picture of a quiche earlier and thought how well that would go down today. Gorgeous short pastry filled with a perfect set creamy egg mixture.  Lovely. I love short crispy pastry and I usually always have bacon and cheese in the fridge and so rummaged through my recipes trying to find a basic quiche recipe.  I fried off the bacon until golden but not crispy, cut half of the cheese into chunks and grated half.  The custard was literally just set - it was perfect and so good with a rocket salad with a whole grain mustard dressing.  Simple food done well can really bring a smile to your face - it did mine.
