I have an old faithful spaghetti Bolognese recipe that I have perfected over a few years. It is rich, full of taste and enjoyed by everybody but sometimes I come across a recipe that makes me think I need to try that.

The other day I came across a Bolognese recipe by George Colombaris. It had cloves and cinnamon and 3 different meats and really intrigued me and so I knew I needed to try it. It tasted like a bowl of Bolognese that had been sprinkled with Christmas. It was really different but so so nice. Not as rich and tomatoey as the English version but Iā€™d definitely make it again as a Christmas Bolognese special.
