Today is leftovers day, a day where I use up remnants of dishes or ingredients so they do not go to waste.

Last week I bought a beautiful side of salmon and ended up only needing half so I had the other half leftover along with some filo pastry and a half a jar of pesto and some cream cheese from the weekend so came up with a dish to use all. Salmon pesto pie - salmon in a creamy pesto sauce with scrunched crispy filo on the top.  

My confidence started to wane after I put it in the oven but it didn’t need to. It worked really very well and was delicious with some simply boiled buttered new potatoes.  Took 10 mins of prep time tops - just what you need for the middle of the week.
