The dish that reminds me the most of my childhood is spaghetti bolognese which my mum would sometimes cook. It’s was deep and rich and I remember then not quite being able to control the long spaghetti and so ending up absolutely covered in tomato sauce at the end.
I still love it and I have a memory engrained in my brain of helping mum cook it and her just smiling widely, happy. I’m having a nostalgic moment this week and was thinking back to memory and I thought how nice it would be to cook bolognese. I made a large pot and used half today for spaghetti bolognese and I will save the other half for later in the week.
I have changed the recipe from what mum cooked a fair amount and I really like to leave the sauce cooking away for at least an hour getting richer. Researching recipes I discovered how different the authentic Italian dish is compared to what we like here in the UK. Our dish is much richer and darker and really very, very different.
