In Raymond Blanc’s book Kitchen Secrets he tells you to rehydrate dried mushrooms in cool water over several hours rather than in boiling water for 20 minutes. 

I have always rehydrated dried mushrooms in boiling water but since reading this have tried several different types of mushrooms with cool water over a few hours.  The only drawback is you actually need to think about it a few hours in advance. 

The amount of colour (and therefore flavour) that comes out of the mushrooms is so much less and, also, the mushrooms just hydrate much much better.

For any recipe you need to hydrate mushrooms, just hydrate 3 hours before you need them and carry on as the recipe requires. If you try it, let me know what you think.
