Last summer the book of the month was Greekish by Georgina Hayden and she had some lovely wings in her book we cooked. Although the taste was good, we like our wings to be crispy and after being marinated we could not get the crispy.
We tend not to fry wings as we try to keep a bit of a lid on the calories. Lots of wing recipes marinate but then the skin has no hope of crisping up. So having made lots of different wing recipes we have come to the conclusion that wings don’t need marinating, there is lots of skin and so as long as you have a glaze and make sure there is more than enough to coat all parts of the wing skin then there will be more than enough flavour.
These wonderful wings have a gorgeous honey and lemon glaze and they are topped with golden baked feta for a little saltiness and crunch.
