I love simple meals, especially on a week day.  Today was a 20 min dish, basically a puttanesca with feta.  I got the water on to boil, cooked my onions, garlic and chilli in some olive oil, added tomato purée and cooked for another minute before adding a tin of crushed tomatoes, salt, pepper, sugar and Italian mixed dried herbs.  Meanwhile I got the pasta cooking, chopped some olives and crumbled the feta.  When the pasta was cooked I stirred it through the sauce and topped each plate with the olives, feta and a grind of black pepper.
