Happy Easter!
I have lots of happy memories of Easter when the children were young, of their faces when they saw their eggs, of the time spent with family, of the end of Lent and a lot of the baking we did.
This year I wanted to bake some Easter things and remember fondly the times when they were younger. Victoria saw some cute bunny cinnamon rolls and I thought I would give them a go, instead of just cinnamon I have also used some mixed spice because it makes me think of hot cross buns so much. Then I made some mini egg cookies and some Easter cupcakes that is meant to be a little bunny tail and feet, thought these were so cute.
If you are cooking over the weekend then some lovely fish dishes perfect for Good Friday are the hake with cauliflower and cabbage and salmon with crème fraiche. Both are delicious, the Hake is a longer cook than the salmon which really is a bit of a one pot wonder.
For something special Sunday try this minted lamb loin with morels, asparagus and onions or try the lamb loin with cauliflower peas and mushrooms.
