One of the nicest sandwiches is a salami, cheese and gherkin baguette (or it is really good with oaty bread too).  You could also use gherkin pickle. The pickle that works best in this is the Marks and Spencer burger relish, it is full of gherkins and has a little sour bite and so really goes well with this because it gives freshness to the creamy cheese.  If you do not have the M&S pickle then add a sliced gherkin or two.  Everybody I make this for loves it, including Matt who was really very unsure of it until he tasted it.
