Today Victoria and Noah came for lunch, well Victoria did really, Noah just slept.  We made our lunchtime couscous. Couscous with cucumber tomatoes and feta, so light, so refreshing and really so moreish. I like to ‘cook’ my couscous in stock because, lets be honest, on its own couscous can be pretty bland. I also use lemon juice and good olive oil to finish off. What do I mean by good olive oil? I have 2 olive oils, one for every day cooking use and a more expensive bottle that I would only use on salads , the flavour is stronger and it tends to be much more fruity. 

I also have 2 types of balsamic, one for every day use and one for salads. The salad balsamic is sweeter, thicker and with a much more smooth taste. It really is worth it as the flavours are so much better and really bring cold dishes alive.
