I like quick tasty meals during the week and today we had a sweet potato and spinach satay Thai red curry.  It was really tasty, felt healthy with the spinach and veg and was just what the doctor ordered.

The best thing was it only took 15 mins in the kitchen and then you leave for 30 mins for everything to soften and you just finish off for a final 5 mins at the end.  The roasted peanuts and peanut butter really went so well with the red curry.  Delicious.

I also found what appears to be a foolproof way to cook rice.  Sounds stupid I know but I used to have a rice pot which took all of the guess work out of cooking rice and meant I never had stodgy rice but since that broke I have been trying various ways to cook rice with mixed results.  Today I tried a new way, I put the unwashed rice into boiling water, brought back to the boil, reduced the heat to medium high, cooked for 12 mins and then drained it and covered with a clean tea towel for 3 mins and fluffed with a fork.  It came out perfectly.
