Tonight we made noodles with prawns from A Cook’s Book by Nigel Slater.

It was absolutely delicious, very fresh and light yet filling and perfect for the warm day we had. 

I followed the recipe and most of the ingredients although could not find my newly purchased cucumber anywhere and so used sliced sugar snaps instead. I replaced the coriander with Thai basil which I love with mint. I also used sweet potato noodles rather than angel hair.  I also increased the noodles to 180g as 100g just did not seem enough (they definitely would not have been).

The marinade was really sour with the lime juice so I added a tbsp of honey and reduced it down then tossed everything together.

This was a very quick meal and was so fresh and lovely.  This will most definitely be repeated.
