I can’t believe that this time next month it will be Christmas Eve!

Today I have spent quite a lot of time looking up recipes and formulating a Christmas meal plan so tonight was one of our quick favourites - moules and frites with a twist.  The twist is it is cooked in a Thai curry which really takes away some of the richness of mussels somehow and it works so nicely with chips.

This is a true cheats meal, frozen french fries, pre-prepped mussels so 20 mins start to finish which always makes me happy.
