Matt has been away for the weekend and so I needed to traipse all the way to Heathrow today to get him, during the rush hour. I know, I also groaned a lot. Anyway so I thought I would make something that needs to marinate through the day, gathering flavour and then cooks fairly quickly. We turned to Little Viet Kitchen by Pham Thuy Diem and made her honey and coconut water pork chops along with jasmin rice and stir fried chard from Fire Islands by Eleanor Ford. It was such a fabulous meal, the pork was soft and tasty and the chard utterly delicious.
Have I told you I have a thing for chard? I am not sure why but when I see it, I buy it. I do really like it but not necessarily any more so than cauliflower or cabbage or broccoli or pak choi and yet I don’t feel compelled to buy those. It really is so odd but so funny. Even Rhona said more chard?? Ha ha
